Who, what, when, where, why. Why? WHY? WHY?!?!?

Dustin Drankiewicz, National award winning bartender & author (MONEYGUN, The Pink Squirrel, author of Cocktails For Ding Dongs) & Milos Stevanovic, one of the most sought after F&B operators in the greater Chicago area (Virgin Hotel Group & and seen on TV’s Bar Rescue) met while operating The Swill Inn (winner of Best New Bar In America, Best New Restaurant in Chicago 2021) & Chit Chat Lounge in the River West neighborhood of Chicago. Dustin was a Part Owner of the establishment & Milos was the Operational Manager. It was there they discussed their goals of opening & operating a “simple yet creative & interesting concept one day” With their combined 30+ years in “the bar world” they assumed it would involve Pizza & Booze. (Insert global Pandemic) After emerging from their pandemic hibernation & reconnecting 1 year later to catch up they learned they both were making pizza, bread and getting nice and “doughy.” They decided to test run the idea of a Pop Up & Food Truck operation that would later become Paper Plane Pizza. After multiple speed bumps and the uncertainty of the F&B industry (not to mention a food truck breaking down monthly and a temporary Pop Up space falling apart) they decided to hit pause and focus on lining up an opportunity inside 3rd Street Market Hall in Milwaukee, WI and another opportunity that would later land them inside From Here On food hall inside the Old Historic Post Office in Downtown Chicago. They have created their own unique style of dough that has nods to that classic NY style & tedious preparation components of Neapolitan pizza. The addition of their unique Hoagies, Focaccia sandwiches and creative yet simple salads have put them on the radar as the next “best up & coming pizza concept in the Midwest.” With already obtaining a few “attaboys” with “Best New Slice” and “Things you must eat” in 2023 the 2 of them look forward to opening their brick & mortar locations that will re-introduce their expertise in bar programming and promise not only their incredible pizza program but a world class bar program to match it. Keep your eyes peeled for what Paper Plane Pizza has in store for the near future.

Located inside 3rd Street Market Hall at 275 W Wisconsin Ave in the thriving “up and coming” Downtown Milwaukee, Wisconsin. The former Grand Avenue Mall has undergone a huge facelift which will continue thru 2024. The building now houses over 5000 office employees from companies like Power, American Heart Association, Northwest Mutual, etc. And also home to ESPN radio, Top Golf Suites, 13+ top notch food vendors and many, many more things to explore.
